We guarantee
that all of our beef is sourced from cattle from within the United
Kingdom.
Our company policy is to source from local suppliers wherever
possible; however in our commitment and passion for quality we also
source outside Scotland from some of the top beef producers within
the United Kingdom.
All our beef can be traced back to its farm of origin through the
beef labelling initiative implemented by the Scottish Executive
Environment & Rural Affairs Department (SEERAD). Under the
scheme, SEERAD are entitled to visit Donald Russell through
unannounced verification visits, and Donald Russell are also
audited annually by Quality Meat Scotland (QMS).
Why does our beef taste so
good?
Grass-fed, traditionally reared
cattle
All Donald Russell beef is sourced from cattle which graze for the
majority of the year on naturally lush and mineral-rich grass. In
the depths of winter the cattle are housed in dry conditions where
they continue to be fed a natural diet.
Hand Picked Beef
Donald Russell beef is hand picked from the slaughterhouse by our
most experienced buyers. These slaughterhouses are regularly
audited and inspected by the Donald Russell buying team to make
sure that their production standards match our exacting levels of
quality. Typically our buyers will select beef that has a good fat
covering and marbling effect throughout the meat. This gives our
beef its incredible flavour and explains why it tastes so
fantastic.
Maturing Process
Donald Russell beef is matured for up to 21 days, which allows the
muscle fibres of the beef to break down. This natural process makes
our beef incredibly tender, and gives it a real old-fashioned beef
taste.
The Highest Butchery Standards
Once the beef is fully matured, it's time for our team of skilled
butchers to take over. They have a remarkable passion for the
product and take great care as they employ a wide range of the best
British and continental butchery techniques. Our butchers cut the
beef by hand to the absolute highest standards, which can be seen,
for example, in our special trim Sirloin Steaks (where all
unnecessary fat is removed) and the French trimmed Lamb
Racks (our butchers remove the chine and blade bones, and trim
away nearly all of the fat to reveal clean rib bones). By trimming
away all unnecessary fat, silverskin and gristle our butchers leave
only the finest meat and fat for taste, which means that you get
far more meat for your money.

Beef Steaks
For a substantial meal that you can prepare with the minimum of
fuss, nothing beats a steak. Traditionalists will love our Ribeye
Steaks and Sirloin Steaks, which are well marbled, and have just
enough fat left to give a real, old-fashioned beef taste. If you're
looking for something a little more luxurious, you won't find
better than our Fillet Steaks, while our special cut Pavé Rump
Steaks are nearly as tender, with a real true beef taste. Those
with smaller appetites (or fewer mouths to feed) might like to try
the smaller Fillet Medallions, or our individually packed Sirloin
and Ribeye Singles.
Beef Roasting Joints
On the other hand, if you're feeding more than two, there's nothing
quite like roast beef. The 5-Bone Rib of Beef, cut from the
fore-rib, is the real Rolls Royce of roasts, and can feed up to 18
people, but we also supply many other fine cuts of beef to feed
anywhere from 3 people upwards. If you like your meat to have a
good fat content for the best flavour, try the Ribeye Roll or
smaller Ribeye Roast. For a roast free from all fat and silverskin
try the luxurious Centre Cut Fillet Log, or smaller Chateaubriand,
which are cut from pure, prime fillet, the ultimate gourmet
treats.
Beef Slow Cook Cuts
These humbler, old-fashioned cuts of beef are making a big comeback
as they become more readily available by mail order. Cuts like Shin
of Beef, Oxtail, Beef Brisket and Beef Rib Trim become intensely
flavoursome and wonderfully tender when braised for a few hours.
Still almost impossible to find on the high street, these cuts have
proved to be a popular hit with our customers.
Minced Steak, Diced Steak and Gourmet Steak Burgers
We also sell essentials like Minced Steak and Diced Steak, which
are produced from the same top quality, fully matured beef as
our steaks and roasts. Our Gourmet Steak Burgers are also popular -
they're 100% beef, and bear more of a resemblance to the
"steak-haché" offered in up-market cafès in France than the beef
burgers we're so used to in this country.
Mixed Beef Boxes
If you still find it hard to choose you can always try a selection
of our fine British beef with one of our mixed beef cut boxes. The
Pure Beef Selection contains an assortment which includes Fillet,
Sirloin, Ribeye and Rump Steaks, while the Beef Steak Singles box
