Our genuine smokies are smoked using century-old traditional methods to capture the unique, pungent," bonfire smoke" aroma that's prized by gourmets. Fresh Scottish haddock is hand cured overnight, then tied in pairs and hung on wooden sticks and left to dry. They are smoked over hardwood in a traditional barrel, until they are golden brown.
