It's rare to find these fish prepared to such a high standard. They look small - but that's because we've taken away all the bones and skin, leaving you with a perfect, delicious piece of fish to savour. Incredibly versatile, the herrings are great marinaded, or try them the Scottish way, dipped in crushed oatmeal and pan-fried, while the mackerel can be baked with citrus flavours for a fresh, tangy dish.
