Pork Shoulders with Crackling
Freedom Food that's full of flavour
You get a lot more prime meat with this roast, because our butchers remove most of the fat from under the crackling. Then they replace the crackling, score it, and tie the roast with string so it keeps its shape during cooking. It has a wonderful depth of flavour and is extremely succulent and tender.
