Storage and Handling
Store below -18 degrees. Defrost in refrigerator and use within 48 hours, Once defosted do not refreeze.

Preparation Advice
Defrost 12hrs in the fridge. Carefully remove the Wellington from the packaging, leaving on baking paper. Allow to come to room temperature for at least 10mins. Pre-heat oven to 200ºC/400ºF/Gas 6 along with the baking tray. Brush pastry with beaten egg yolk. Place the Wellington (still on baking paper) onto the pre-heated baking tray and cook for; RARE 14-16 minutes, MEDIUM 19-21 minutes, WELL DONE 24-26 minutes. Remove from the oven and leave to rest for 10 minutes, to serve-carefully lift from baking paper.
