If there is such a thing as a perfect fish, this is it - these fillets look superb on the plate. Rockfish (also known as Loup de Mer) feeds almost exclusively on shellfish, which gives it a lovely flavour similar to langoustine. Serve it pan-fried or poached - one bite and you'll be hooked.
